The Samphire Restaurant offers two rosette-awarded, modern fine dining in a classic space boasting some of the best sea and sunset views in Cornwall. Led by Executive Chef Christopher Archambault, Samphire takes its name from the abundant coastal greenery that surrounds The Headland and often features on the menu along with various other wild-harvested foliage. Menus change with the seasons, reflecting only the best produce is sourced from trusted local suppliers.

Meet The Chef

Christopher Archambault

Since starting out in Devon where he became well known for his inspired, local menus, Chris’ passion for food has taken him all over the world. From the Channel Islands to The Goodwood Estate in West Sussex, and long tenures in Dublin, London and in Canadian ski resorts, Chris’ experience knows no boundaries!

However, relocating to Cornwall in 2015 was something of a homecoming to him: “I’ve been waiting for the right opportunity in Cornwall for some time. The wife being Cornish, all roads led here eventually! Very excited to join such an iconic property and build on an already fantastic reputation. It’s great to be home.”

Prepared with skill and served from the heart, Chris’ menus change often in order to reflect the best local produce from his handpicked selection of local suppliers, many of which he knows personally.

In his down time he is a food photographer, food writer, trainer, product developer and demonstrator.

Chris sums up his style as, ‘simple with a personal touch.’

“I rejoice in the fact that we live and work in one of the most naturally beautiful parts of the world bursting with flavour from coast to coast. Ever more populated with producers, suppliers and chefs that share common concerns.”
